Indoor Barbecue Chicken

1. Pat chicken dry and salt and pepper.2. Heat oil in a 12inch skillet over medium heat until shimmering. Add the chicken and cook until light golden brown on both sides. Transfer the chicken to a plate.Note: For browning to take place, do not lift or move the chicken around in the pan. Let the chicken cook in the pan for 3 to 5 minutes before trying to turn the chicken.3. Add the onion and 1/4 teaspoon salt to the skillet and return to medium heat until softened, about 5 minutes. Stir in the ketchup, molasses, vinegar, Worcester, mustard, maple syrup, chili powder, and cayenne powder, scraping up any brown bits.4. Turn the heat to low. Return the chicken to the skillet, with any accumulated chicken juices, and coat with the sauce. Cover and simmer until the chicken is fully cooked and registers 160 degrees on an instantread thermometer (about 10 minutes).
